Actress, producer and activist Katharine "Kat" Kramer joined me to discuss her famous godmother Katharine Hepburn and her family recipe.
We've covered Katharine Hepburn many times before on Hollywood Kitchen, but there always more to be discussed. Her film career began in 1932 and lasted until 1994. She won four Academy Awards for Best Actress and that record remains unbroken to this day. Hepburn was independent, outspoken and politically active. In other words, we can't get enough!
You can see "Kat" her discuss her bond with Katharine Hepburn in the documentary Call Me Kate, which is available for viewing on Netflix.
Recipe
Katharine Hepburn was close to director / producer Stanley Kramer and starred in his 1967 classic Guess Who's Coming to Dinner. His daughter Katharine "Kat" Kramer was named in her honor. Aunt Kate frequently visited their home and these Cottage Cheese Pancakes were a favorite. This recipe is directly from Kat's mother actress / producer Karen Sharpe.
Ingredients
3 Eggs
1 Small cup of cottage cheese (alternate is Ricotta cheese- for a different flavor)
2 Tbsp of Oil
4 Tbsp. Whole wheat flour with a pinch of salt
1 Cup of cottage cheese, salt and oil. (2 Tbsp of olive oil.)
Directions
Beat the eggs until light and frothy. Add flour and mix until smooth. Use no more than 1/4 cup batter at a time. For easy handling, bake on the griddle until golden brown. Serve with honey, applesauce and fruit. Yogurt can be used as a garnish.
Kat says these pancakes are good served with creamed meat or seafood as a lunch dish.
She always adds 1 cup of honey and 1/2 cube of butter on top. The skillet warms up the butter and it can be used as a sauce over the pancakes.
