Anne Francis is best remember today for her role in the sci-fi classic "Forbidden Planet" (1956) and the TV series "Honey West". She had an impressive list of TV credits including roles on "Dallas", "Fantasy Island" and "Murder, She Wrote". Francis co-starred with Vincent Price in the 1969 western "More Dead Than Alive".
Recipe
I pre-recorded a segment for a summer cooking party hosted by Jenny Hammerton and Peter Fuller. I made Anne Francis' Gazpacho from their cookbook "Supper with the Stars with your host Vincent Price". Click HERE to order a paperback copy!
Ingredients
1/2 clove garlic
1/2 small onion (sliced)
1/2 green pepper (seeded and sliced)
3 ripe tomatoes (peeled and quartered)
1 small cucumber
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons red wine vinegar
1/2 cup iced water
Directions
Place all ingredients in a blender and cover. Blend on medium speed for about six seconds, or until all ingredients are thoroughly chopped and well blended. Chill for about 10 minutes and serve cold. Serves: 4 to 6.
The Final Result
This was tasty, refreshing and easy to make! I paired mine with bread for a light summer meal.
